Tropical Mango
Coleslaw
8 cups shredded
cabbage
1 mango, cut
into thin strips
1 red pepper,
cut into thin strips
4 green onions,
finely chopped
¼ cup chopped
fresh cilantro
½ cup
mayonnaise
1 ½ teaspoons
lemon juice
2 tablespoons
honey
¼ cup cashew
halves, chopped
Combine cabbage,
mango, red pepper, green onions, and cilantro in a large bowl. Mix
mayonnaise, lemon juice and honey until blended. Add to cabbage
mixture; mix lightly and sprinkle with nuts.
