Crispy Mozzarella Chicken with Garlic Spinach

4 small boneless skinless chicken breast halves
1 packet Shake 'n Bake extra crispy seasoned coating mix
1 cup shredded mozzarella cheese
2 teaspoons olive oil
2 cloves garlic, minced
9 oz. Pkg. Baby spinach leaves

Preheat oven to 400. Place chicken between two sheets of plastic wrap; pound to 1/4” thickness. Coat chicken with coating mix as directed on package; place on foil-covered baking sheet. .Discard shaker bag and any remaining coating mix. Bake 10 minutes. Top with cheese; bake 4-5 minutes or until cheese is melted and chicken is done. Heat oil in a large deep skillet or dutch oven on medium heat. Add garlic; cook and stir one minute. Add half the spinach and cook one minute, turning constantly with tongs. Add remaining spinach; cook one minute or just until wilted, turning occasionally. Serve with chicken
