Green Pea Pasta

2 tablespoons white wine vinegar
1 tablespoon olive oil
½ teaspoon lemon zest
¼ teaspoon salt
¼ teaspoon black pepper
2 cups cooked rotini, drained and rinsed
1 ½ cups fresh or frozen peas (thawed)
1 plum tomato, chopped
1 tablespoon chopped fresh basil
¼ cup shaved parmesan cheese

In a large bowl whisk together vinegar, oil, lemon zest, salt and pepper. Stir in rotini, peas, tomato and basil; top with cheese. Serve immediately
