Parmesan Baked Zucchini Spears
5 small zucchini, sliced long into spears
2 tablespoons avocado oil, melted butter, coconut oil, OR olive oil (cook's choice)
1 teaspoon sea salt
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon pepper
¼ cup grated parmesan cheese
Preheat oven to 350. Put zucchini on a baking sheet and mix with all other ingredients except cheese to coat well. Line up the zucchini spears so flesh side is up and sprinkle generously with parmesan cheese. Back at 350 for 15 minutes, then put under broiler for additional 3-5 minutes to brown.
