Spiced Sweet Potato Fries

1 ½ pound sweet potatoes, scrubbed and peeled
¼ cup canola oil
1 ¼ teaspoon Cajun or Creole seasoning
1 ½ teaspoon kosher salt
½ teaspoon sugar

Preheat oven to 450. Place one oven rack in the lower third of oven, the other in the center. Line 2 rimmed baking sheets with parchment paper. Cut sweet potatoes into french-fry-size sticks, about 3” long. In large bowl, mix oil, Cajun seasoning, salt and sugar. Toss potatoes to coat. Spread, without crowding in a single layer on prepared pans. Bake 15 minutes, flip potatoes, and continue to bake 10-15 minutes, until crisp-tender and nicely browned at the edges
