Cheesy Chicken & Rice Bake

1 can cream of chicken soup
1 1/3 c. water
3/4 c. uncooked long grain rice
2 c. veggies
1/2 t. onion powder
1/4 t. black pepper
4 boneless skinless chicken breast halves
1 c. shredded cheddar

Mix soup, water, rice, veggies and seasonings in a 2 qt. shallow baking dish; lay chicken on top. Cover and bake @ 375 for 45 min. Uncover, sprinkle w/cheese and let melt. Remove chicken & stir rice before serving.

Note: To make this healthier, use plain yogurt or plain greek yogurt instead of the soup, and change to brown rice....increase baking time to 1 ¼ – 1 ½ hrs.
