Fresh Veggie Pasta Salad
4 cups uncooked farfalle (bow-tie pasta)
1 carrot, cut lengthwise into quarters, then crosswise in thin slices
1 cup grape tomatoes, cut in half
1 cup snow peas, trimmed and cut lengthwise into thin slices
½ cup chopped red onions
½ cup shredded parmesan
2 tablespoons chopped fresh parsley
½ cup sun dried tomato vinaigrette dressing
Cook pasta as directed on package, omitting salt. Drain pasta and place in a large bowl. Add remaining ingredients and mix lightly.
