Cider Glazed Stuffed Chicken


6 oz. Pkg. Stove Top Chicken stuffing mix
2 cups apple cider, divided
¼ cup butter, divided
1 stalk celery, minced
2 apples, peeled, chopped and divided
6 small boneless skinless chicken breast halves, pounded to 1/4” thickness
¼ teaspoon paprika
3 tablespoons brown sugar


Preheat oven to 350. Combine stuffing mix, 1 ½ cups cider and 1 tablespoon butter in microwaveable bowl; cover with waxed paper and microwave on high 5-6 minutes. Fluff with fork. Add celery and half the apples to the stuffing and mix lightly. Place chicken, top-side down, on cutting board. Spread stuffing mix over chicken and roll chicken up starting at short end. Place seam-sides down in a 9x13” baking dish sprayed with non-stick spray. Melt one tablespoon butter, mix with paprika and brush on chicken. Bake 40 minutes. Transfer chicken to platter and cover to keep warm. Melt 1 tablespoon butter in a medium skillet on medium-high heat. Add sugar, remaining cider and apples. Cook 5-6 minutes or until thickened, stirring frequently. Remove from heat, stir in remaining butter until melted and pour over chicken.
