Caramel Apple Bread Pudding
1 tablespoon butter
3 small Gala apples, peeled and chopped
25 caramels
12 ounce can evaporated milk, divided
14 oz. Can sweetened condensed milk
4 eggs
1 teaspoon vanilla
½ teaspoon ground cinnamon
¾ pound unsliced white bread, cut into 1” cubes
½ cup dried cranberries
1 cup thawed whipped topping
Preheat oven to 350. Heat butter in large skillet on medium heat; add apples and cook 5 minutes, stirring frequently. Remove from heat.
Place caramels in microwaveable bowl. Add 2 tablespoons evaporated milk; set aside. Pour remaining evaporated milk into a large bowl; add sweetened condensed milk, eggs, vanilla and cinnamon and whisk until blended. Add the bread and stir until liquid is absorbed. Stir in apples and cranberries; pour into buttered 2 qt. Baking dish. Place in water bath and bake 1 hour 10 minutes. Microwave caramels on high one minute or until completely melted, stirring every 30 seconds. Drizzle
over pudding and serve with whipped topping.
