Texas Sunrise Tacos
1 large tomato, chopped
2 green onions, thinly sliced
2 teaspoons finely chopped jalapeno
4 whole eggs
2 egg whites
6 flour tortillas (6”), warmed
¾ cup Mexican Style finely shredded four cheese blend
½ cup chopped fresh cilantro
Combine tomato, green onions, and jalapeno. Whisk whole eggs and egg white until blended; pour into a large nonstick skillet. Cook on medium heat 2-3 minutes or until soft set, stirring occasionally. Spoon eggs onto tortillas; top with cheese, tomato mixture and cilantro; fold in half.
