BAKED POTATO SOUP
2/3 cup butter
2/3 cup flour
7 cups milk
4 cups baked potatoes (peeled and cubed)
4 green onions, sliced fine
12 strips bacon, cooked and crumbled
1 1/4 cup shredded cheddar cheese
8 ounces sour cream
3/4 teaspoon salt
1/4 teaspoon pepper
Melt butter, stir in flour until smooth. Add milk, stirring constantly, until mixture thickens. Add potatoes and onions, bring just to boiling point. Reduce heat and simmer 5 minutes, stirring constantly. Add bacon, cheese, sour cream, salt and pepper. Stir until cheese melts. Makes 8-10 servings.
