Ramen Taco Salad
2 pkg (3 oz.
Each) ramen noodles
14 oz. Coleslaw
blend
1 cup thawed
frozen corn
1 cup rinsed
canned black beans
1 cup shredded
sharp cheddar cheese
½ cup coarsely
chopped fresh cilantro
½ cup ranch
dressing
½ cup hot taco
sauce
2 tablespoons
fresh lime juice
Discard
seasoning packets from ramen noodles; coarsely crumble noodles into a
large bowl. Add coleslaw blend, corn, black beans, shredded sharp
cheddar cheese and cilantro; mix lightly. Mix dressing, taco sauce
and lime juice; add to salad and mix lightly. Makes 15 servings.
