Broccoli-Cheese Oven Omelet
12 oz. Fresh
broccoli florets
2 tablespoons
water
1 cup shredded
sharp cheddar cheese
1/2 cup cream
cheese spread
8 eggs
¼ cup grated
parmesan
Preheat oven to
425. Place broccoli in a 9” square microwaveable baking dish that
has been sprayed; add water, cover with waxed paper and microwave on
high 2 minutes. Drain and return broccoli to the baking dish.
Sprinkle with shredded cheese. Whisk cream cheese spread, eggs, and
grated parmesan until blended; pour over broccoli and bake 25
minutes, or until top is golden brown and center is set. Makes 6
servings.
