Hearty Fruit Muffins
2 cups baking mix
1 pkg. (3 oz.) orange gelatin
2 teaspoons ground cinnamon
1 egg
1 cup canned pumpkin
¾ cup orange juice
1 gala apple, chopped
½ cup raisins
½ cup chopped walnuts
Preheat oven to 400. Combine baking mix, dry gelatin, and cinnamon. Whisk together egg, pumpkin and orange juice in a large bowl until blended. Add combined dry ingredients and remaining ingredients; stir just until moistened. Spoon into 12 sprayed muffin pan cups. Bake 20 minutes. Cool in pan 5 minutes, then remove to wire rack.
