Crunchy Baked
Okra
1 cup yellow
cornmeal
½ cup panko
bread crumbs
1 tablespoon
kosher salt
½ teaspoon
fresh ground black pepper
½ teaspoon
crushed red pepper
½ cup fat-free
buttermilk
1 egg, lightly
beaten
1 pound fresh
okra, cut in 3/4” slices
Preheat oven to
450. Mix cornmeal, panko, ½ teaspoon salt, black pepper, and crushed
red pepper in a shallow dish. Combine buttermilk and egg in a large
bowl and whisk to combine. Add the okra, toss to coat and let stand 3
minutes. Dredge the okra in the crumbs and spread in a single layer
on a sprayed jelly roll pan. Sprinkle with remaining salt. Bake 30-35
minutes, stirring once.
