Slow Cooker Smothered Chicken With Bacon & Onions
8 slices bacon, cut into 1” pieces
2 onions, cut lengthwise in half, then sliced crosswise
1/3 cup flour
½ teaspoon pepper
1 ¼ cups fat-free reduced-sodium chicken broth
8 bone-in skinless chicken thighs
¾ cup Savory Garlic Cooking crème
4 cups uncooked egg noodles
2 tablespoons chopped fresh parsley
Cook and stir bacon in large skillet on medium heat until crisp. Remove with slotted spoon and drain on paper towels. Reserve 2 tablespoons dripping in skillet, add onions and cook 15-18 minutes, stirring occasionally. Add flour, pepper, and half the bacon to the onions for the final minute. Whisk in broth – this will be a thick mixture. Add chicken to slow cooker with onion mixture. Cook on low 4-5 hours (or high 2-3 hours). About 15 minutes before serving, cook the noodles per package directions, omitting salt. Drain noodles, place on platter and top with chicken. Stir the cooking crème into the onion mixture in slow cooker, then pour over chicken. Top with remaining bacon and parsley.
