Tex-Mex Jalapeno Cheese Ball
8 oz. Softened cream cheese
8 oz. Shredded sharp cheddar cheese
¼ cup mayonnaise
½ cup chopped red onions
1 fresh jalapeno, seeded and minced
½ teaspoon ground cumin
¾ cup chopped fresh cilantro, divided
Beat cream cheese, cheddar cheese and mayonnaise with mixer until blended. Add onions, peppers, cumin, and ¼ cup cilantro; mix well. Shape into ball, wrap in plastic wrap and refrigerate one hour. Roll cheese ball in remaining cilantro until evenly coated.
