Fiesta Smashed Potatoes
1 ½ lb. Yukon gold potatoes, cut into 2” chunks
½ cup classic ranch dressing
1 cup finely shredded Mexican style 4-cheese blend, divided
2 green onions, finely chopped
¼ cup chopped red peppers
2 tablespoons chopped fresh cilantro
Add potatoes to large saucepan of boiling water; cook until tender. Drain potatoes and return to pan. Coarsely smash potatoes; stir in dressing. Stir in ¾ cup cheese, onions, and peppers just until blended. Top with remaining cheese and cilantro
