Twice Baked Sweet Potatoes
2 large sweet potatoes
2 oz. Neufchatel cheese, cubed
2 tablespoons fat-free milk
1 tablespoon brown sugar
½ teaspoon ground cinnamon
¼ cup chopped pecans
Preheat oven to 425. Cut potatoes lengthwise in half; place cut sides down in foil lined 10x15” pan. Bake 30-35 minutes or until tender. Scoop out centers into a bowl, leaving a 1/4” thick shell. Add cheese, milk, sugar and cinnamon to the potato centers and mash until well blended. Fill shells with potato mixture, top with nuts and bake 8 minutes
