Shepherd's Salad
2 chopped tomatoes
1 chopped cucumber
1 chopped cubanelle pepper
¼ cup finely chopped red onion
½ cup chopped parsley
3 tablespoons olive oil
1 ½ tablespoon lemon juice
¾ teaspoon kosher salt
Pepper to taste
Combine vegetables and parsley in a bowl; toss with remaining ingredients. Let stand 10 minutes before serving.
