Spaghetti Sauce

1 pound hamburger
1/3 cup diced onion
1 clove garlic
6 oz. Tomato paste
3 tomato paste cans of water
29 oz. Tomato sauce
1 tablespoon salt
½ cup sugar
1 can mushrooms

Brown hamburger, onion and garlic; drain. Add tomato paste, water, tomato sauce, salt, sugar and mushrooms. Simmer ½ hour covered, then simmer uncovered ½ hour or to desired consistency.

Buttermilk Pancakes

1 cup buttermilk*

1 egg

1/3 cup vegetable oil

¼ cup sugar

1 teaspoon salt

½ teaspoon soda

½ teaspoon baking powder

1 cup flour


Mix egg and buttermilk; add remaining ingredients and mix. Cook on hot griddle (or skillet).


*make buttermilk by mixing 1 cup milk and 2 tablespoons vinegar; stir and let set 5 minutes before using

Chili Relleno

½ pound ground beef

½ pound sausage

1 cup chopped onion

2 cloves minced garlic

2 four-ounce cans chopped green chilis

2 cups shredded cheddar cheese

4 eggs

¼ cup flour

1 ½ cup milk

½ teaspon salt

Tabasco to taste


Preheat oven to 350. Brown ground beef, sausage, onion and garlic; drain. Line a greased 9x9 baking dish with one can of chilis, top with 1 ½ cup cheese. Add meat mixture; top with remaining can of chilis. Beat together eggs and flour until smooth, add milk, salt and Tabasco; blend well. Pour egg mixture over casserole. Bake uncovered 40 minutes at 350. Sprinkle remaining ½ cup cheese on top; let stand 5 minutes.

2 cups flour
1 cup sugar
2 tablespoons cocoa
2 teaspoons baking soda
1 cup water
1 cup salad dressing (mayonnaise)
vanilla

Preheat oven to 350. Sift flour, sugar and cocoa. Add soda dissolved in water. Beat; blend in salad dressing. Bake at once, 20 minutes at 350
