Aunt Leona's Fruit Salad
1 large can fruit cocktail, drained
1 can chunk pineapple, drained
1 can apricot fruit filling
bananas
Mix and refrigerate

½ cup shortening
1 cup brown sugar
1 ½ cup flour
½ teaspoon salt
1 teaspoon baking soda
1 ¾ cup quick-cook oatmeal
1 pound pitted dates
1 cup sugar
1 cup water
Cream shortening and sugar; add sifted dry ingredients and oatmeal. Mix until crumbly. Press half the mixture into a 9x13 pan. Spread date filling over mixture (see instructions below), top with remaining crumb mixture and pat smooth. Bake 30 minutes at 350.
Filling: Combine dates, sugar and water. Cook on top of stove to the consistency of jam.

2 cups multi-grain penne, uncooked
1 pound boneless skinless chicken breast, cut up
1 ½ cup thick and chunky salsa
1 cup frozen corn, thawed
1 large green pepper, cut into small strips
1 cup shredded four-cheese Mexican blend cheese
Cook pasta. Heat non-stick skillet on medium high heat, spray with non-stick spray. Cook and stir chicken bites two minutes, stir in salsa, corn and peppers. Bring to boil, simmer on medium low heat for ten minutes, stirring occasionally. Drain pasta and add to chicken mixture, stir to mix. Sprinkle with cheese; remove from heat, cover and let set one minute or until cheese melts.
