BAKED POTATO SOUP


2/3 cup butter
2/3 cup flour
7 cups milk
4 cups baked potatoes (peeled and cubed)
4 green onions, sliced fine
12 strips bacon, cooked and crumbled
1 1/4 cup shredded cheddar cheese
8 ounces sour cream
3/4 teaspoon salt
1/4 teaspoon pepper

Melt butter, stir in flour until smooth. Add milk, stirring constantly, until mixture thickens. Add potatoes and onions, bring just to boiling point. Reduce heat and simmer 5 minutes, stirring constantly. Add bacon, cheese, sour cream, salt and pepper. Stir until cheese melts. Makes 8-10 servings.

10 pounds ground beef
1 chopped onion
5 30 oz. cans chili beans
6 cups (or more, to taste) tomato juice
1 1/4 cup (5 packets) Williams chili seasoning

Brown ground beef and onion; drain. Add other ingredients and simmer.

INSTANT HOT CHOCOLATE

8 quart package powdered milk
1 cup powdered sugar
6 ounce jar Coffeemate
1 pound Nestle's instant chocolate

Blend and store in airtight container. To make, mix 2/3 parts water with 1/3 part chocolate mix. Makes about 50 cups.

PEANUT BUTTER FUDGE

4 cups sugar
1 2/3 cup evaporated milk
20 ounces peanut butter
7 1/2 ounces marshmallow creme

Cook sugar and milk over low flame to soft ball stage. Remove from heat and add peanut butter and marshmallow creme. Set pan in ice water and beat until candy is stiffened.

4 1/2 cups sugar
1 can evaporated milk
1 stick margarine
3-4 squares unsweetened chocolate
12 ounces chocolate chips
1 pint marshmallow creme
1 teaspoon vanilla

Cook sugar, milk and margarine to soft ball stage. Remove from heat and add other ingredients. Set pan in ice water and beat until candy stiffens.
