Chocolate Mint Sugar Cookie Drops

2 1/2 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoons salt
1 1/2 cup sugar, divided
3/4 cup vegetable oil
2 eggs
1 teaspoon vanilla
10 oz. Nestle's Mint Chocolate Chips

Preheat oven to 350. Combine flour, baking powder and salt; set aside. In a large bowl combine 1 cup sugar and vegetable oil; mix well. Beat in eggs and vanilla. Gradually beat in flour mixture. Stir in mint chocolate chips. Roll dough into balls; roll balls in remaining sugar to coat. Bake 8-10 minutes. (These do NOT brown - don't leave them in the oven beyond baking time, thinking they are not done)

Vegetable Cheese Soup

1 medium potato, peeled and diced
1/4 cup each chopped onion, celery and carrot
1 teaspoon chicken bouillon granules
2 1/2 cups water
1 1/3 cup frozen mixed vegetables
1 can (10 3/4 oz.) condensed cream of chicken soup, undiluted
1/2 pound processed cheese, cubed

Combine potato, onion, celery, carrot, bouillon and water. Bring to a boil. Reduce heat; cover and simmer 10-15 minutes, until potatoes are almost tender. Stir in mixed vegetables and cream of chicken soup. Bring to a boil. Reduce heat; cover and simmer 5-10 minutes. Stir in cheese just until melted.

3 small packages Jello
3 cups boiling water
4 envelopes unflavored gelatin
1 cup cold water.

Dissolve flavored Jello in boiling water. Soften unflavored gelatin in cold water. Combine flavored Jello mixture with softened gelatin and stir until completely dissolved. Pour into a 9x13 pan and refrigerate until set.

"Color code" your Jello flavors to a holiday and make this more fun by cutting with holiday-appropriate cookie cutters.....you can put this in a 10x15 pan so the Jello is not as thick and easier to use with cookie cutters if you like.

Easy Cheesy Potato Chowder

1 package Chicken Helper - chicken & potatoes au gratin flavor
11 oz. can Mexicon, undrained
2 cups water
3 cups milk
2 cups cut up cooked chicken or turkey
4 oz. shredded cheddar cheese

Heat uncooked potatoes and sauce mix (from Chicken Helper), corn, water, milk, and chicken to boiling in dutch oven, stirring constantly. Reduce heat; cover and simmer 15 minutes, stirring occasionally. Stir in cheese, sprinkle with topping from Chicken Helper.
